2 tsp powdered erythritol, or to taste |
4 strawberries, sliced |
1 tbsp fresh lemon juice |
1 tbsp slivered almonds |
1 cup ricotta cheese |
1/2 tsp lemon zest |
Directions:Combine the ricotta, lemon juice, zest, and erythritol in a blender or food processor and blend until smooth. You could also stir by hand. Place a spoonful of ricotta mixture into the bottom of two cups, top each with a few strawberry slices, and sprinkle with almonds. Repeat the layers until your ingredients are used up. Enjoy!
