Olive Garden Zuppa Toscana Soup
Delicious and creamy Zuppa Toscana that tastes just like it is from the Olive Garden!
Ingredients:
4 slices bacon
1 lb Hot Jimmy Dean sausage
1 lb smoked sausage sliced
1 tablespoon butter
2 cloves garlic, minced
1 onion, diced
10 cups chicken broth
1 ½ to 2 lbs cut cauliflower
5 cups packed chopped kale
3 cups heavy cream
Black pepper, to taste
Directions:
Bring chicken broth and kale to a boil in a large stockpot. Cook bacon in a large skillet then transfer to a paper towel-lined plate; break into 3/4" pieces. Add cauliflower to stockpot. Add Hot Jimmy Dean sausage to the skillet and cook about 3-5 minutes then crumble while adding smoked sausage to stockpot halfway through. caramelize onions in the skillet then add to stockpot with bacon pieces and crumbled sausage and simmer about 1-2 minutes. Stir in heavy cream until heated through, about 1 minute; season with pepper, to taste.
